WSS V2 Calculated Column

When I attempt to use the following formula to define a calculated
column, it throws up on the use of TODAY...

=IF ([Status] = "Completed", [Modified] - [Created] , TODAY-[Created])

Any suggestions?

I know I saw a trick to that somewhere..

It had to do with creating a blank column  in your list called "today."

Then what you do is create your calculated  column using the today  column
you just created. Once that is done, you can delete the first "today"

I know this works in v3, it should work in v2 as well.

I briefly looked at that link..

It looks very much like what I had found earlier..but not sure if it was
for v2 or v3..

This was commonplace in WSS v2 and still works in WSS v3. You can use a
temporary column  called Me to stub in for [Me] in a formula  too.
