WSS Upgrades

I'm trying to find a way to do site-by-site migrations from our current v2
infrastructure to our new v3 environment. Any best practices how to go about
doing this?

Well, I would start by reviewing the "Gradual Migration" scenario

If that's not granular enough J and your not wanting to do the upgrade this
way (Rather move sites from a V2 farm to a V3 farm, and perform that
upgrade)

What "I" would recommend, is repartition the site to be upgraded into it's
own content database.

Detach that database from the V2 virtual server

Attach to the V3 virtual server

If you have to move the database to a different SQL server as well,
detach/reattach for SQL.

When you add that database into the list of databases for the V3 web
application, it will do an inplace upgrade of the site.

Bear in mind, that all things you need to watch for when doing a same farm
gradual upgrade will apply as well.
