WSS 3.0 RTM - Document library loses all associated document types

Both Yesterday and today, our SharePoint instance decided it wanted to
lose all associations with document types. The icons disappeared from
the doc library and the option to open or edit in Word or Excel etc
disappeared...

We can reset IIS to solve the problem - but has anyone seen this
before - and if so, any idea of the cause?

It seems to happen daily or every other day in between IIS resets.
