Workflow - Seeing changes before approvals occurce

We are using SharePoint Server 2007. We have a list (Contacts) that
Contributors can edit. However, we don't want the modifications
posted to all users until they have been approved.

We have added a workflow, but the changes still appear before the
workflow item is approved. There must be something that I am
missing. Can anyone help?

If the others are not Site Owners, then turning on Require content
approval for submitted items in the list's Versioning settings should
filter unapproved items out of the list.

You do not need a workflow  to accomplish this.

Now, how do I approve the change if no workflow  is needed?

Once you have turned on Require content approval for submitted items,
there should be a new view visible to approvers of the list called
something like Approve/Reject Items; where approvers can approve
unapproved list items.

List Approvers can setup an alert to be notified when a list item is
waiting to be approved.

One additional point should be made. If non-Approvers create Alerts to the list they will be Alerted when things are submitted, not when items are approved. This has a tendency to bother regular users. Be prepared to explain that this is by design. I don't know of any way to change it.
