A more rich event driven environment would be the first requirement of a good workflow system. A workflow system (or a "state machine" in comp sci lingo) which is designed to work in a server environment. (As opposed to something built on Office. I have nightmares of server systems incorporating Office apps via OLE/COM. Shudder...) This would require some sort of rule base which would be driven by SPS events. The rules would then kick off actions. (Sounds like something built on SQL Notification Services.)

In addition to the other comments on workflow, the ability for the
approver(s) to be notified that they have items to approve.
Similarly, notification  options for when items are due to "expire".
This would be extremely useful for content owners to keep content
fresh if they could set an expiration date, but be notified x number
of days prior to expiration so they can choose whether to update the
content, change the expiration date, or let it expire.
