How do I determine (other than the site's look and feel) which template
was used to provision the site?

You can use SPWeb.WebTemplate to get the info you need. Of course, you
need to write a simple program to do this.

Not sure there are any other easy ways or not.

to save it as a template,
rename it to cab, and look at the xml. The site  definition is listed
there.

I also believe that the docs table in the content DB has a listing of the
template ID in there as well.

Look for the string

This will refer to the Template and Configuration used.

<TemplateID>1</TemplateID>
<Configuration>0</Configuration>
