Another IIS issue of sorts is that I see that WebDAV is 'Prohibited'
in Web Service Extensions. I did some research on this, and I do not
see any harm in Allowing it. It might explain a few of the comments I
have heard from users about how a Explorer window view does not show
revised dates for folders and issues related to a Mac user of mine.

Anyway, would I run into any issues by changing WebDAV from
'Prohibited' to 'Allowed'?

My understanding is that the WebDAV web  service extension you see in
IIS is not used by SharePoint. Enabling or disabling it should have no
impact on access to SharePoint content, positive or negative.

sharepoint has it's own WebDAV, and does not rely on the one in IIS. I assume
(don't know for sure) that enabling WebDAV in IIS opens you up to the standard
WebDAV vulnerabilities.
