Visual Studio 2008 and workflows - with office 2003

All we have sharepoint and moss 2007 but office 2003 and may move to
office 2007 in the near future. I am thinking about using visual studio
2008 due to the enhanced features for sharepoint workflows. What
problems will i have with using office 2003

You should not experience any problems. I have done workflows  in which
both Office 2003 and 2007 have been used. The integration between the
two versions is slightly different so the user experience may change
between the them, but it should not cause any workflow problems.
