How is it I'm supposed to get users in my pick list when I set up a
lookup field to lookup users?

I've got 1775 user profiles and 10 users set up on the site but my
picklist only has me, the site creator, and two others.

How would I get the rest of those people in that pick list?

Unless there is a work-around someone can share, users  are only added to the list  once they make a visit to your site.

If this picklist exists in a teamsite, I believe you will need your users  to
visit your site before the actually show up in the lookup  list
