stsadm -o restore on a medium server farm

Our farm consists of two web front ends, load balanced; one sql farm
that also hosts central admin, and a second middle tier server that
also hosts central admin and searching and indexing.
If I am to do a restore operation, which server(s) do I need to do the
restore to?

Any of the machines that have SharePoint installed on them will work.
You said you have "one sql  farm" I assume you meant "one sql server."
If that's the case I would run the restore  on a server  besides that one,
just to take load  off of it, since that's where the restore is being
written to, SQL.
