STSADM Command to set Site Quotas

Wondering if anyone knows of any sts admin command that can set a site
quota template to a site collection after the site collection is created.

Yup, the setproperty operation can do it:

stsadm -o setproperty -propertyname defaultquotatemplate -propertyvalue
"1 GB quota" -url http://sharepoint/sites/IT

Thanks for pointing this one out. I thought this was used for the Web
App template. Can this be used to apply to the site  collections under
the web app?

For example, I have 100 site collections within Web App "A". If I
wanted to apply different quota templates to the different site
collections under that Web App, can this command  be used for each of
those site collections?
