if you arent log  shipping, just use simple recovery model. microsoft doesnt even support restore using sql  server with sharepoint!

yes, you need it. if performance becomes an issue, make sure the transaction  logs are on a different drive than the databases. If your transaction logs are becoming large, verify your maintenance plans look correct and are working. backups should flush the logs, something could be wrong with your backup software
