SPS/WSS on SQL/W2003 Std vs Adv vs Ent versions - any experiences

Whilst understanding that Sharepoint Technologies can run on standard server products and does not require Ent or Adv , does anyone have any advice on whether I would be creating any "technical cul-de-sacs" or future problems if I run SPS/WS on standard products, or perhaps limiting exploitation possibilities by making such a lower level entry ?

oh, yeah, my client also would like to append new entries to the menu that don't
exist in the SharePoint menu taxonomy. They would not like to create a custom
XML to replace Sharepoint entirely.

Is this possible in this version, or possibly the next?

Beyond the hardware limitations that the W2k3 standard  imposes I am not aware of any other limitations and if that would become a factor upgrading the OS is certainly possible. In fact, we normally install on the standard products.
