SPS V2: Restore

I currently have 3 portal sites running on 1 server (3 different IP
addresses and 3 different FQDNs). I run backups on each portal site.
When I do a restore it tells me to delete the portal site. If I do that,
it's only restoring that 1 portal site only right? This won't affect the
other 2 portal sites in anyway? If somebody has done this, please let me
know if you were successful or not.

Yes, when you restore you can select which portal you want to restore
