One thing that I can recommend would be to look into AvePoint product to
back and restore.
here is their site:

There are many ways of doing backup  and restore for DR.
Firstly you could have a separate system on standby and use content
deployment packages created to deploy content from one server to another. I
can recommend just sticking with the standard in-built MOSS2007 backup
functionality. Best to script this and run as a scheduled tasks or you could
write it using .NET and have it run as a scheduled task within the MOSS
framework. I can still recommend using command line tools such as stsadm,
always works well. The above ways of doing it all rely on you having to have
some standby server(s) that you can restore this to. AvePoint do have a nice
product and the version for MOSS2007 is even better and is designed for DR
and General Backup. I suppose you need to decide what level of DR/Backup you
need, then you can decide which method to use. If your SLA is let's say 2hrs
then maybe a combination of inbuilt backup and AvePoint plus SQL Clustering
or Mirroring would suffice. I have a couple of customers who have only
chosen to go with OOTB Methods for their backup and DR. Other customers I
work with have chosen AvePoint all the way. So really up to you. Anyway hope
this helps.
