My sites

All of a sudden no one that has created a "My Site" is able to get to
their personal or shared documents page. All they get is an error page
with "access denied" on it. Has anyone else had this issue?

Verify you didn't change the personalization permissions in SSP
administration. Maybe it could be an accidental change to user
permissions levels in Central Admin? Accidental Web Policy?

Just ideas to get you started...

I was also wondering, if I just wanted to delete what I have and
start over, could I just delete my current SSP and the create another one?
Nobody has really done anything with their My Sites yet. Would this affect
anything on the main Sharepoint site?

I think that would be fine. I often blow away SSPs when working with
customers, just to get a fresh start. Verify you have the My Site Host
template applied to the / (root) managed path of you're my Site Web
