If you're using MOSS with publishing features active, this is an option
from Site Settings -> Navigation. You can choose what is displayed on
both the top and left navigation.

I could be wrong but I think Nabil's referring to the site  directory
web part(s) which, in my experience, don't seem customizable within
the UI. I tried all kinds of ways to make it show just sites, but you
can't lose the libraries, lists, etc. I finally had to mickey-mouse a
manually created list to show up instead.

Go to the SITES tab.

Select the Site Map tab.

Click on Edit the page from the Site Actions menu.

Edit the properties of the Site Map web  part. You will see checkboxes
for whether to include pages or not and how many levels deep to go.
