How do can modify the template of a site post-creation?

Build a site  using the template-- change it the way you want it -- and make
another template!

I have imported a site  template, .stp file, to the Site template  Gallery
using the Site Settings->manage security and additional settings->Manage
Site Template Gallery. At the top of the page it states:
The templates in this gallery are available to this site and all sites under
it. Default site templates are not shown.

When I go to the Sites area and create a site, the imported template does
not show up in the list along with Team site, Blank site,...

What do we need to do?

Sounds like you are in a Portal. Because of bucket-webbing, you will
need to push the site  Template into the global template  gallery using
STSADM's addtemplate operation. Something like this:

STSADM.exe -o addtemplate -filename "c:\CoolSite.stp" -title "Cool Site"
-description "Desc of cool site"
