SharePoint Communications Security

I understand that Outlook attachments transit the network unencrypted.
However I'm not clear on SharePoint. If a user on a unencrypted
corporate network opens a Word Document located on a SharePoint
server, does that file transit the network to the users PC? If it
does, is the file secured in anyway during transit?

If a user  opens a document  is opened from SharePoint over port 80 then potentially it is not as secure. If the user opens  up the document from a SSL enabled SharePoint Server then yes it is encrypted. SharePoint works the same way as any normal website that you are trying to download a document from.
