Sharepoint, AD, modified by names not showing

I work in a school that uses SP as a way for students to submit work.
Each student has an account in AD. We have a home page for the school
and each teacher has a sub site under that page. When the students
submit work it doesn't show the name of the student who submitted it
under the modified by section. This causes a problem because the
teachers can't see who submitted the work. There are a few students
that do show up and I don't see any difference between their accounts
in AD and the ones not showing. We use NT authenticated users to allow
them access, however I have setup some teachers sites with each
individual student's accounts but this doesn't help. Whenever I added
those students individually it shows domain/firstname.lastname whereas
the ones that work correctly it just shows firstname.lastname. Can
someone tell me where does SP get those names?

We've recently seen some craziness associated with giving "NT
Authority\authenticated users" access  to stuff. We try to standardize on
"domain\domain users" and it seems to work  better for us. Try replacing a few
of your "nt authority" permissions with that and see if it helps.

The name is populated when you add the user to the site. The name can
also be updated by the user themselves. Unfortunately, name is not a
required field.
