SharePoint 2010 and the IIS Default web site

I know that in 2007 is was a bad idea to run your default web application in the
default IIS site, I have a client that has their current server set up this way
right now, and they are having all kinds of problems around the sharepoints
sites not coming up at all, or coming up but taking almost a minute to load.

I am just wondering what the community here thinks of this??

I personally disable the Default Web Site any time I stand up a SharePoint
environment. I then create a new Web Application and go from there. Have you
attempted creating a new Web Application and tested response time to see if it
in fact has anything to do with the Default Web Site or if it's something else
above IIS such as CPU or Memory causing the slow load?
