sharepoint 2007 vhd / server 2008

Is there a SharePoint 2007 VHD that runs off Server 2008? I've been
looking around, but so far no luck.

No, there isn't an official one from Microsoft available.

I figured. I'll just make my own then.... or see if I can upgrade the
"demo" one running on 2003 v2 off Microsoft's site.

If you are going to try the upgrade route, make sure you implement WSS and MOSS
SP1 before upgrading to 2008.
