Set a layout.aspx to a custom master page?

Page Catalog, then go to Format-->Master Page--> All I see is "Manage
Content Regions". "Attach Master Page", "Detach Master Page" and "Open
Attached Master" are gray'd out.

Is there any way to have all your content pages in a Publishing site
use the default master page set in the UI, but, have one or two layouts
in the same site, use a different master page?

You can if you wanted to manually add the master  page you
wish to use by editing the Page layout  in SharePoint Designer and changing
the "MasterPage" option at the top of the page. You could also write your
own class that inherits from the "System.Web.UI.Page" class and does an
override on the "OnPreInit" method and sets the Master page  based on the
page layout or whatever criteria you want. Hope this helps.
