If I understand properly, the Categories folder in Sharepoint is a
"searchfolder". So it's content and hierarchy is being defined by a search
action (on the categories property). If I understand it correctly, the
folder does not permanently exist but is being generated when viewed.
Can anyone explain to me how I can create such a searchfolder, using
different document properties. For example: I would like to create custom
"views" on the document collection so I can represent the documents by
documenttype, customername, date, subject, etc.

You need to use WebDav to create  the search folder  - it's documented in
the Exchange SDK.
