Saharepoint server outgoing e-mails

This could be a newbie question but it struck me the other day and I couldn't
really answer it. I am planning on creating a workflow that will e-mail a
person once a certain check box is checked. That's an outbound e-mail from the
sharepoint server. I will not have any inbound e-mails to the sharepoint
server. So when I configure outbound e-mails...first what are the steps, I'm
thinking I just plug in the to/from and SMTP/port in Central Administration and
I'm good to go as long as the server has permissions with the SMTP server on the
network. Second, my sharepoint server is a web front server...publishing
site...how can I make sure that once SMTP outbound e-mail is configured, I won't
have it being used to send spam. Thank you in advance for your comments on
this.

You can easily lock down your SMTP server  so that it only accepts mail from
certain IPs. Try a search like
http://www.google.com/search?q=lock+down+IIS+SMTP+relay and you should get
some good  results.
