RSS of a View

I want to use my view to create my RSS feed. I created the view and clicked on
the RSS symbol only to find that the resulting feed contains many many more data
fields than my view defines.

Mousing over the RSS icon suggests that my feed is to be *of* this view. Is it
supposed to behave this way?

Is it a standard extra bunch of fields, like creator/modified/etc or is it
just every single field in the list?

Go to the 'Modify this view' dropdown of the view  from which you want the RSS.
The RSS feed  symbol/link inside there is the one you want.
