Removing standard templates and adding customized ones

We are involved in a POC for a client wherein they want to remove
all standard templates and add customized ones in Sharepoint portal
server 2003. Being a newbie in sharepoint portal server 2003, I am a
bit lost. Can anybody give me some suggestion on how to implement
the above requirement.
I also need some guidance in CAML scripting.

We are basically looking at a Windows server 2003 based SPS 2003
server installation.

What kinds of templates  - site, area, list, ??

basically site and area...............

Site templates  are handled using stsadm. Area templates are generally created
after installation by editing the area and saving a new template. The
administrator documentation talks about this in detail.
