Out of the box, you cannot change the sorting  capabilities of the
document library  web parts. You can, however, change it with custom

I know I saw some code from someone where they were able to make the
default sort one of either of author, title, or date, but they didn't go
so far as to add  other sorting criteria. You'd just need to find out
where the code is for that.

I did a quick search, and the documents web  part refers to
FolderItemsPart.xsl, which calls setSortByTitle, setSortByAuthor, and
setSortByDate, with this listed inside:

test="/dav:multistatus/Context[OrderByPropertyUri $ieq$
test="/dav:multistatus/Context[OrderByPropertyUri $ieq$
test="/dav:multistatus/Context[OrderByPropertyUri $ieq$

Maybe you can muck around with this OrderByPropertyUri value to get
something other than Author, title  or date.
