If you're setting  this up to learn the technology you can't go wrong
with Virtual PC and running it on Server in there. SharePoint won't run
on XP or Vista, it has to be run on server. Microsoft has a
downloadable Virtual PC image you can try out. All free of charge.
Grab it here,

You really need xp pro so that you can have IIS. As far as virtual
machines go, I can only speak for VMware, you need IIS to use parts of
VMware. You will get an error during the set up that talks about IIS.

One last note, you can download a VHD (virtual hard drive) from
Microsoft that is all set up with server 2003, SharePoint and I think
groove(all demo versions). It will save you the time of configuring
just to see if it will work. For that one you will need virtual server
from Microsoft.
