It's possible, but OOTB all users will be able to see all responses. A
relatively simple workaround is to use an event handler and/or workflow
to move the completed survey responses to another identical survey list
on submission, the 2nd being security trimmed.

Plus, you cannot restrict people to a single response on anonymous  surveys.
