Preserving history of item changes

Currently we're using a choice column with a range from 1-7 to determine risk
level. Is there a way to maintain this data in some fashion so that if the
value is changed in the future that a calculated column could be used to display
the delta? The calculated column part of this seems easy enough but I'm not
sure how to retain this data. Any idea?

your only option would be to custom-code a column  that gathers this
data from the version history.

Would it just be an API call to pull most recent
version of the row item  then?

I'm just shooting from the hip here, but it would seem fairly
trivial to get the version collection from the SPListItem.Versions property;
at that point you just need to identify the most recent version (hopefully
the first or the last) and pull the requisite field on that version.
