Is it possible to create a Shared Service Provider with already running sites?

We have a server farm (2 servers) with MOSS 2007 hosting TFS 2008 portal (few existing project sites).
But the server farm configuration is not complete - i.e. there is NO default Shared Service Provider (SSP) installed/configured.

In order to enable features like Excel Web Services and Site Usage Statistics we need to create the SSP:
"As a key element of the SharePoint architecture, at least one Shared Service Provider must be created (before any sites) to support Search and ... Excel Web Services".

The problem is that the project sites are already running...
And they have bulk of info.

Is it possible to create the SSP with already running sites?

Or what should be done in order to solve this issue?

Yes, you can create  a new SSP at any time. The only issue is that since your site collections were created before there was a default SSP you will need to go back into the Web Application content databases and associate them with a Search Server for indexing to work properly. New Web Applications will be associated when you create the Web App now that you have a default SSP.
