I have multiple servers, web, index, and search. Do I have to configure the PDF

iFilters need only to be installed on the indexing server(s). However,
you may have some additional desirable configuration required on other
servers, such as PDF icon, etc.

I recently found that PDF files could not be found on teamsites (WSS2).
Teamsites search  use the SQL server  Full text search to find data.
If you have a separate front end and database server, then you'll have
to install the PDF IFilter on the database server as well and do some
extra configuration. See microsoft KB article on
http://support.microsoft.com/kb/927675
