is there a way to parse the email content into a Sharepoint list so it creates
the columns and places the content for those columns correctly?

I've poked at this a good bit as a "power user" for MOSS 2007 w/r to a DocLib,
and the answer is NO. I assume lists behave the same. It turns out that you
need a custom event receiver for the Lib or List. They can't be too hard, but
we are not allowed that degree of customization in our farm.

Turns out that it is virtually impossible what I want to do. The structure of
the email body changes so there is no way to parse something so random in
nature. I'll call this undoable.

Please check email enabled document library.

I built an application a while ago that did exactly what you are
asking. The suggestions to use EmailAdded event receiver was also the
way I accomplished this.

In particular I configured the sender to always wrap its data in
structured XML and send it in the body. I was able to parse the body and
deserialize the data into a list.
