No updates to a column after it's populated

We have a need to restrict update permissions to specific columns once
they are populated.

Is there a way to not allow updates to a column once it contains a
value?

There is no direct method for doing this, as SharePoint doesn't support
column-level security. What you can do is play some tricks with lookup
fields into other lists, setting the restricted permissions  on those
"lookup" lists.

Here's what I'd do, and keep in mind that I'm not a developer.

Edit the editform.aspx page, so that it doesn't contain the field that
you don't want to be changed. Unfortunately, if users have the ability
to create their own views, they could create a view that contains the
field, and "Edit in Datasheet".

If you turn on content approval on your list, though, they won't be
able to actually change anything when they switch to Datasheet mode.
