Moving MOSS 2007 databases to a different SQL server

We currently have a MOSS 2007 portal up and running. However I need to
move the databases to a different SQL server. This was pretty straight
forward in SharePoint 2003 but I am a little nervous with doing this for
MOSS 2007. I am not sure where to start. Can anyone point me to online
resources?

I haven't actually used any of these guides, but a couple of them are from
well-respected SP folks and they each offer a slightly different perspective
