MOSS Server Roles

I'm getting ready to load up MOSS 2007 in a production setting and
I've been working with a MOSS RTM setup as my testing area. The test
environment currently consists of one MOSS server doing everything
except for the DB work, which is handled by our monster SQL Cluster.
In thinking a bit more about this I think I want to split out the
Index and perhaps Query services onto another Virtual Server so that
I'll have the WFE on one server, the Index/Query services on another,
all talking to the SQL Cluster. In order to get the Index/Query
services split out to its own server as part of my testing server
farm, would it simply be a matter of installing MOSS on that new
server and then configuring it to be a member of the farm? I assume I
would also have to do some configs to tell my WFE to no longer
index/query since I'll be moving those services.

I just want to get all this down before I load up my MOSS 2007
Production environment, which I'm hoping to do today since I'll be on
business travel next week.

Lastly, I assume it's fairly simple to add new servers to your farm
after the fact, yes? For example, if we want to add an Excel Services
and InfoPath Forms Services server and/or add more WFE or index
servers to a farm, MOSS's design allows for that. We just want to be
sure that we are prepared for future growth.
