This is the main resource that MS points us to. I did a little digging in the WSS 2.0 Admin guide and found this:

Which has generally the same content as the other article that you previously pointed to. I also did some searching in the SPS 2003 ADMIN guide and found this (very short and to the point!):
Database server — migrate a single server installation using SQL Server 2000 Desktop Engine to a SQL Server 2000 server on a server farm
Back up everything on your existing database server.
Install SharePoint Portal Server on the newly built server, choosing the SQL Server 2000 option.
Create a configuration database.
Restore all of your components.
Use the Edit button on the Restore tab to specify the settings for each component, including the new name for the server.
This is about all that I could come up with at the moment.. I would imagine that someone would have this process on a blog somewhere..
