logging in with service accounts

The networking group at my job is trying to implement a new policy that
will prevent system administrators from logging into servers using a
service accounts. I vaguely remember reading somewhere that there are
several instances whereas I will need to log into the server using my
SharePoint service account that runs several SharePoint services. I am
trying to find best practices and/or documentation on this.

I usually only log into the server using the service account when I
install SharePoint or patching the servers.

Can anyone provide any additional information to support why I should be
able to log in using the service account. This account is not a domain
administrator. It is just a domain user.

Once we started using SP2k7 I quit logging  in to the server  with my
service accounts. If I need to install anything or run an
application as a specific Sharepoint service, I just use the "run as"
command.
