1. Personally, the only strategy I would trust for privacy from
*administrators* is encryption. That makes document  upload a little less
convenient obviously, but it is the only reliable protection. A sufficiently
privileged admin  can always get to your data, if not through the sharepoint  web
interface directly or indirectly, then directly from the database. Otherwise,
the best you could do is make it less convenient for them to see things. I
usually use encrypted zip archives or TrueCrypt virtual drives, both of which
are free or very inexpensive and easy to use.

2. Again, for myself, I would prefer to synchronize SharePoint with SharePoint,
or SharePoint with Outlook, but if I really _had_ to synchronize SharePoint with
the file system, the first thing I would try is doing it from the file system by
using a file system folder synchronization utility and pointing it to the
desired folder and to a web folder for the SharePoint document library. I've
used "SynchToy" (a Microsoft freebie) successfully for this purpose. You can
reference your SharePoint document library  as a UNC or as a mapped drive.
It's not a perfect solution, but it is a very easy and inexpensive "good enough"
for most purposes.
