How do you use javascript in SharePoint. to..

Determine which checkbox is checked and the value of the checked item?

Some backgroud:

We have an email-enabled list and our client would like to use the
choice field to send emails to mulitple users.

How do we use the choice field to select multiple items and concatenate
their values and send an email to each of these values?

The JavaScript will be the same as any other HTML site. For SharePoint, simply place this in a Content Editor Web Part on the page that has the item you are looking to work with and then either place the code directly into the source code editor or put the file into an document library (e.g. create a new library named "includes") and then use the script include directive:
<script type="text/javascript" lanaguage="javascript" src="http://server/includes/includename.js"></script>

If this is an application page (e.g. "/_layouts/NewForm.aspx") you may not see the "Edit Page" option. Simply add to the URL a query string of "&PageView=Shared&ToolPaneView=2" and the SharePoint Tool Pane will show up allowing you to select web parts to add to the page.

You will need to get a handle to the control and JQuery would be a tool I would recommend you look into for a solution as well.
