IUSR in Sharepoint

I was doing some checking in IIS and I saw that the shared folder that
sites on my SharePoint server had the IUSR_SERVER account enabled for
anonymous access. I have disabled it but did not remove the username
or password info. The account is seen on my other websites in IIS, but
anonymous access is also disabled. One quirk is that when I check the
properties on the 'Web Sites' folder in IIS is that it shows anonymous
access is enabled even though it is disabled in each instance.

Can anyone provide any insight?

I'm not sure about your anonymous access  issue, but many of the
properties at the "Web Sites" level are defaults that can be
overridden by specific web  sites, virtual folders etc at lower
levels.
