We had the same problem, in our production environment.

In our environment we had four custom programs scheduled in windows. One of
the programs were breaking sometimes while running, because of that the memory
used for custom program are not released.

We felt because of custom program issue, we are not able to see server  name in
IIS. we even checked event viewer, found some issues with the custom program as

Then we fixed the issues in custom program which actually causing problem  by
providing proper exception handling.

After fixing the issue, we dint find  any issues with IIS, for server names

There might be other issues as well, causing the issue.

Check for any custom programs, if any.
