Is there any way to change or does anyone know of a workaround for
changing the "From" address in email alerts and email workflows to
something other then the global configuration address in Central Admin?

As we have different business requirements for each site or maybe
list, We want to be able to change the "From" address to something
other then the global SharePoint Admin address that is setup for
outgoing email.

Thoughts?
