I am evaluating Sharepoint's Discussion Lists as an entry level "Helpdesk"
system for a small team.

Can we add additional field; say "Solved/NotSolved" flag for an entire
"thread"; and then can create views to show those threads having "NotSolved"
flag? If this can be done; please provide related pointers.

Sure, just add  the required columns through Modify Setting and Columns
once you have created the discussion.
