Disable/Hide a field of a List

I want to disable or hide a field of a Custom List depending who has
logged-in to the sharepoint web application. So when user clicks on new
item for the list, I want to disable/hide a field for all the users
except administrator.

Please let me know how this can be achived?

You can create a custom field  type to do this. The url below describes a
private or secure field where only the specified people can update its
value.
