Diagram onTwo tier MOSS installation

Is there any documentation available on setting up a two-tier MOSS
installation using a SQL 2005 server as the back-end and a IIS server
as a front-end?

Assuming that you're putting MOSS on the web server and the databases on the
SQL server, you're doing a standard server farm installation. So your IIS
server should have Windows Server 2003 SP2 with WWF (.NET 3.0 Framework).
You run the install and select Advanced -> WFE and follow the screens. When
you launch the SharePoint Wizard after the Install is complete, it will take
you through setting  up the database connection. After that, you complete the
remaining steps using the Admin Task List that is generated. It has all of
the documentation  built in.

The entire process should be in the online documents for server farm
installation if you want to review it ahead of time.
