Deleting User information

One of our admins no longer works for our company and we would like to
remove his Admin account from showing up in Sharepoint. We have taken
him out of AD and he no longer is in any groups, but his name still
appears in sharepoint as the person who created a specific site. I
spotted his user information in the UserInfo table. Is there any way to
modify this or get rid of it without breaking anything? Anyone have any

Use the command line operation stsadm to delete a particular user  from SharePoint and then go to Manage Sites and reopen the list to override his name.
Just to experiment I modified the user profiles database and modified the UserProfile table, and I also modified the site  database and renamed user info in UserInfo table. I can see the renamed user name in the team site Announcements web part.
I'm in a dev box.
