I am trying to customize a SharePoint in such a way that I can restrict
some edit fields to be edited or viewed only by the owner. What ways I
can do it. Tried InfoPath forms but not option there.

A more specific solution for what you are asking for is:

I have been looking for something exactly like this for SP2007, but I'm afraid
to install it after reading the comments on the download page
(splistdisplaysetting.codeplex.com/discussions). Does
anyone have any experience with this add-on?

I tested it successfully a few years ago, but I see what you mean from the
comments. It looks like it is flaky to get running on anything other than 32-bit
W2K3.

One of the comments points to Smart List by Infowise as an alternative It does
have both a paid and a free version. At least you could get some support from
them presumably. See
