Customizing Default Search Web Part Select Options

I have several company websites indexed as content sources in an SPS
2001 workspace. Each of the sites are set as search scopes. The
default option to search all scopes is "This site" in the search web
part. I am looking for help to customize the web part to
replace "This site" with a more descriptive select option.
